These vegan meatballs from The Stingy Vegan are made with from-scratch seitan using vital wheat gluten. They’re quick and easy to prepare and are baked for a super-healthy and versatile vegan meatball!

Ingredients

 1 medium-large potato, peeled and dicedabout 225 grams / 8 oz
 ½ cup cooked white beans100 grams
 1 medium onion
 5 cloves of garlic3 roughly chopped, 2 minced or grated
 2 tbsp soy sauce, tamari or liquid aminos
 ½ cup vegetable stock120 ml
 1 cup vital wheat gluten130 grams
 2 tsp paprika
 2 tsp dried oregano
 3 tsp dried basil
 4 tbsp nutritional yeast
 ½ red pepper, diced
 1 cup tomato sauce240 ml
 ½ tsp salt
 pepperto taste
