Turn your leftover wheat starch from flour-washing into delicious vegan crepes! With the additions of JUST Egg (or your favorite egg replacer), plant milk and butter, plus a little extra flour, these skinny pancakes make a great breakfast. Omit the sugar and stuff with your favorite savory fillings for a tasty meal anytime. Yields about 8 crepes.

Add all the ingredients except for the melted butter into a blender or food processor and blitz until smooth. Then add the butter and blend again for another 30 seconds.
Heat a non-stick skillet over medium/high heat and coat it with a little oil or butter.
Ladle the batter into the pan and swirl it around to spread out the crepe as thinly as possible. If you find it's coming out too thick, thin out your batter by mixing in a little more plant milk. Since all starch water varies by thickness, this part may take a little trial and error.
Cook it in the pan for about 2 minutes, or until the batter has set and is no longer liquidy before you flip. Then cook for about another 2 minutes on the other side, or until it begins to brown. Recipe should yield about 8 crepes.

Suchhhh an amazing recipe! I make seitan once a month but never knew what do to w the starch water until I found this recipe! I made a couple of modifications just bc I’m vegetarian (egg replacement mainly) and they turned out great! Definitely going to make a bunch of these rn

I wish I could attach a photo! 💞So… I had made a washed flour vegan ham awhile back, & wisely saved my starch water & froze it.
Initially I was going to make “bacon”, but heard about crepes! I found your recipe. I made them, stacked them between sheets of waxed paper, wrapped them up good packaged & froze them. Fast forward over month later to yesterday, I served an impromptu plant based brunch to my family which included an asparagus & “ham” quiche made w the mock ham, plus these delicious crepes! I heated them, buttered them w vegan butter, folded them & served them on a tray dusted w powered sugar & drizzled with homemade orange simple syrup. Had some fresh orange
slices on my tray w a lil parsley to garnish. Each person then could also dollop some dairy free whipped cream & fresh berries. I will have to make seitan even more often now just for starch water for these amazing crepes!
