There's a lot of coleslaw recipes out there, but what makes this one a little different is that it's mixed with barbecue sauce (and it's vegan, of course) making it the perfect side or topper for all your barbecue-style seitan sandwiches!

Ingredients

 1/4 cup your favorite barbecue sauce
 1/4 cup vegan mayonnaise
 1 tbsp dill pickle juice
 1 tsp mustard I used yellow, but dijon would be great.
 ½ tsp celery seeds
 2 tbsp onion, minced About a 1/2-inch slice off a medium-sized onion
 sugar to taste (optional)Most coleslaw is sweet, but I find the barbecue sauce brings enough sweetness without the additional sugar.
 1/2 head green cabbage, shredded
 1 large carrot, peeled and shredded
 OR a 14oz/397g bag of coleslaw mix It's what I used in the pic!
 5 scallions, green parts only, sliced

Directions

Mix all ingredients through the sugar (if using) together in a small bowl. In a large bowl add the shredded cabbage and carrots OR bag of coleslaw mix, plus the green onions and toss to combine. Coat the cabbage mix with the dressing and let it chill, covered, for at least one hour before serving.
