4 cloves garlic
1 tsp dijon mustard
¾ cup cooked pinto beans
2 cups vegetarian “beef” broth, divided
3 tbsp soy sauce or tamari
2 tbsp olive oil
2 cups vital wheat gluten
½ cup nutritional yeast
1 tsp dried chives
1 tsp smoked paprika
½ tsp black pepper
1 tsp thyme
1 tsp rosemary
Yogurt Mint Sauce
1 cup fresh mint
1 clove of garlic
¾ cup unsweetened coconut milk yogurt
2 tbsp fresh lemon juice
½ tsp salt
Optional
2 parsnips for “rib” garnish
chopped pistachios, lemon zest, and chopped mint for serving
