Ingredients

Fat Layer:
 1/2 cup/80g Vital Wheat Gluten
 4 tbsp tapioca starch
 1 tsp agar agar powder (not flakes)
 1 tsp salt
 1 tbsp sugar
 1/4 tsp garlic powder
 1 tbsp rice vinegar
 3 tbsp/25g melted refined coconut oil (or other light colored oil)
 1/3 cup/70g cold water
 1/2 tsp Outstanding foods Pigless Bacon Seasoning (optional)
Ham Layer:
 1 can light or dark red kidney beans, undrained
 1/4 cup cold water
 2 tbsp white/light miso paste
 2 tbsp maple syrup
 2 tbsp nutritional yeast
 2 tbsp vegetable oil
 1 tbsp rice vinegar (sub white/apple cider vinegar)
 1 tsp salt
 1 tsp onion powder
 1 tsp garlic powder
 1 tsp smoked paprika
 1 tsp Outstanding foods Pigless Bacon Seasoning (optional)
 1 capsule/1/2 tsp red yeast rice powder (optional)
 1 3/4 cups/215g Vital Wheat Gluten
Ingredients for Glaze:
 1/2 cup orange marmalade
 1/4 cup maple syrup
 1 tbsp bourbon (optional)
 1 tsp mustard
 1/2 tsp ginger
 1/4 tsp ground clove

I subbed out fresh beetroot for powder to yield a firmer texture, as well as added more beefy flavoring to the mix. I left out the mushrooms, started with a little more flour for a larger yield, and slightly adjusted the amount of seasonings and tofu. I really twisted the dough when knotting this one and wrapped in a cheesecloth to keep it from expanding in my slow cooker. I think this improved the texture, giving it a better "meat grain," but it's still just as flavorful and juicy as the original.
