This beefy seasoning blend is the perfect base for any seitan or vegan recipe that you want to beef up! Adds complexity and umami to any dish.

There are a few ingredients you might only find online (which is the case for me living in a very rural area), but they last a really long time and are an amazing addition to soups or stews, used as rubs and more! Plus when washing flour to make seitan, using less wet ingredients tends to give you more control over the resulting texture, so you may just find yourself using them again and again!

This blend makes 21+ tablespoons, which should be enough to season approximately 16 "steaks," 2 large, or 4 small roasts.

Ingredients

 5 tbsp porcini mushroom powderSometimes I buy the powder, sometimes I grind my own from dehydrated porcini mushrooms. Grinding your own has more flavor than any powder I've tried, but it seems to cost about the same for me and buying pre-ground saves the work!
 5 tbsp onion powder
 2 tbsp salt
 1 tbsp smoked paprika
 1 tbsp garlic powder
 1 tbsp coarse ground black pepper
 2 tsp instant coffee
 1 ½ tsp tomato powder

Directions

Pulse all ingredients in a food processor or muddle together into a fine powder.

Store in an air tight container. Should keep for several months.
