Avant-Garde Vegan’s Streaky Bacon

2.25 cups Vital Wheat Gluten300g

4 tbsp Chickpea Flour

2 tbsp Nutritional Yeast

Wet

1 cup Vegetable Stock240ml

½ cup Apple Juice120ml

½ cup Dried Mushrooms10g

2 tbsp Soy Sauce

5 tbsp Maple Syrup

1 tbsp Miso Paste

4 tbsp Sweet Smoked Paprika

2 tbsp Liquid Smoke(increase smoked paprika if you don’t have liquid smoke)

1 Red Onion, sautéed

2 Cloves of Garlic, sautéed

½ cup Chickpeas100g

1 tsp Dried Sage

½ tsp Fennel Seeds

1 tsp Smoked Sea Salt

1 tsp Black Pepper

Streak

Dry

1 cup Vital Wheat Gluten130g

2 tbsp Chickpea Flour

1 tbsp Nutritional Yeast

Wet

½ cup Firm Tofu80g

½ cup Soy Milk120ml

½ cup Chickpeas100g

1 tsp Onion Salt

¼ tsp Garlic Powder

1 tsp Dried Tarragon

1 tbsp White Miso Paste

1 tsp Pepper

Additional Salt for sprinkling
